Mini Spinach Souffles






























Tonight I made some spinach souffles in my ramekins. Here is the recipe:







1 60z bag Baby Spinach
1 Tablespoon butter
1Tablespoon flour
salt and pepper
1/2 cup milk
1/2 cup grated cheddar
2 eggs separated
1 egg white
butter and parmesan cheese for ramekins

Preheat oven to 350 degrees. butter 4 6-8 oz ramekins and dust with parmesan cheese.
Wash spinach and shake off, chop slightly, cook in nonstick frypan to wilt.
Melt butter in small sauce pan or saute pan and add flour, stir in milk and cook and stir until thick, add salt and pepper to taste, remove from heat and add cheese, stir until smooth. Let cool slightly, add the spinach and mix well. Stir in the egg yolk.
Beat egg whites until stiff and fold into spinach mixture. Spoon into ramekins and bake for 20-25 minutes, until browned on top.

What is a Ramekin?


Ramekins are little baking dishes used for serving a variety of dishes such as creme brulee, Molten Chocolate Cake, mini souffles, cheese dishes, ice cream baked "cocottes", crumbles, or scallops or used to serve side condiments. They are great for managing portion control.

Traditionally circular with a fluted exterior, ramekins can also be found in novelty shapes, such as flowers, or hearts. They hold anywhere from 2-8oz
Ramekins are built to withstand high temperatures, as they are frequently used in ovens, or in the case of creme brulee, exposed to the flare of a cooking torch or broiler.
